At Eugénie, nature is a majestic presence throughout your stay. 9 gardeners look after the 15 hectares of parkland that adjoin a small forest, where guests can stroll when they’re not jogging along the allée des Cavaliers.

For the past decade, Eléonore and Adeline have been modernising the estate, anchoring it in its time and promoting it abroad, while Michel continues to oversee the culinary side of things.

ADELINE & ELÉONORE

Today, Eléonore and Adeline Guérard, born in 1983 and 1986, are in charge of Les Prés d’Eugénie and, more broadly, of the family group, the Chaîne Thermale du Soleil. The two sisters work in symbiosis. They complement each other and share responsibilities according to their tastes and skills.

IN THE KITCHEN WITH MICHEL GUÉRARD & HUGO SOUCHET

Hugo seduces Michel and Christine Guérard with his perfectionism and his taste for subtlety. Hugo Souchet rose to the formidable challenge of Eugénie’s restaurants: 350 covers a day, 5 repertoires of flavours, 4 outlets, and room service… More than anything else, the Chef lived up to the 3 Michelin stars awarded to Michel Guérard and won his trust. The duo worked together in perfect harmony, first on recipe ideas and then on the complete overhaul of the concept of the Michelin-starred restaurant in 2021. Michel Guérard’s dream came true, after months of shared effort. The legacy is now in the best hands, so that the culinary adventure of Les Tables d’Eugénie continues to sparkle in the eyes of lovers of exceptional flavours.

THE GASTRONOMIC RESTAURANT

The gastronomic restaurant sublimates French tradition in a historic setting.

 

8 to 10 signature dishes such as Lobster “tourne-feu”, coconut milk & orange blossom marine broth, Dim Sum diaphane with mushrooms, creamy truffle infusion & oak mousse, Marquis de Béchamel “cloud” entremet in exclusive Bernardaud plates.

L’ORANGERIE

A winter garden atmosphere at L’Orangerie, where Michel Guérard’s classics are served alongside healthy, natural cuisine. The sweets are served in a 19th-century dessert trolley and the wine from the vineyards of Château de Bachen, owned by the Guérard family, in Bohemian crystal.

LA FERME AUX GRIVES

Just a stone’s throw away, La Ferme aux Grives delights its guests with a Flemish painting décor, with its large table covered in multicoloured vegetables, its accumulation of birdcages on the wall, and its huge fireplace whose hearth reveals imposing pieces of spit-roasted meat. The cuisine of Michel Guérard, who has a predilection for rotisserie cooking, finds its field of expression here.

The ART of bathing

Thermal waters have been known for thousands of years and were first appreciated by the Romans, then by the great and the good of every era, from Montaigne to Henri IV to Empress Eugénie. Their virtues are used to treat rheumatic and muscular pain and excess weight.

THE THERMAL FARM

Christine and Michel Guérard had the idea of adding a country spa to Les Prés d’Eugénie, alongside the thermal establishment, dedicated to medical thermal treatments. Housed in a traditional Landes farmhouse restored using traditional materials and the skills of local craftsmen, La Ferme Thermale revisits the spa treatment and health rituals that combine the benefits of springs with the virtues of plants.

SOURCES

Conceived by Eléonore and Adeline Guérard, the Sources concept reflects the expectations of an exciting but exhausting age. Located between Gascony and Occitania, Sources detox retreats benefit from the experience of the duo, who are at the helm of one of France’s leading wellness centres, La Chaîne Thermale du Soleil, and several renowned hotel estates, including Les Prés d’Eugénie in Eugénie-les-Bains, a 5-star Palace hotel, and Le Château de Riell, a 5-star hotel in Molitg-les-Bains.
